Tonight brought the 2nd new recipe of the week to our plates. Honey Rosemary Chicken with Potatoes. And let me just clear something up before we go any further…
It was DELICIOUS!!!!
I couldn’t even dish the chicken with a fork because it just fell apart. The “sauce” was absolutely fabulous. The potatoes were super soft. It was just pure yummy.
Now…if only I hadn’t forgotten to add a veggie….. LOLĀ Eh. Oh well.
So here you go my fab fans and followers. Another wonderfully tasty dump & ditch meal (that requires a little pre-dump prep).
Honey Rosemary Chicken w/Potatoes (a la slow cooker)
Prep Time: 20 mins
Total Time: 8 hrs 20 mins
Servings: 6 servings
Ingredients
12 skinless bone-in chicken thighs-about 5 pounds (I used about 3lbs chicken breasts)
1 tablespoon vegetable oil
1 pound baby Yukon Gold potatoes
2 medium onions, cut into thin wedges (Mo special–several shakes of the dried minced)
4 garlic cloves, minced (I used 2)
~~I doubled the “sauce” part of the recipe and I’m SOOO glad that I did!~~
1/4 cup honey (1/2 cup)
2 tablespoons fresh lemon juice (4 tbsp)
2 tablespoons cornstarch (4 tbsp)
1 tablespoon coarsely chopped fresh rosemary, plus sprigs for garnish (added til it looked good)
1 teaspoon salt (added til it looked good)
1/4 teaspoon freshly ground pepper (again…added til it looked good)
Directions
1 Rinse chicken and pat dry. Heat oil in a large nonstick skillet over moderately high heat. Add chicken and cook, turning, until browned on all sides, about 8 minutes.
2 Place the potatoes, onion and garlic in a 4- to 6-quart slow cooker; top with chicken.
3 Stir together honey, juice, cornstarch, rosemary, salt and pepper in a small bowl. Pour over chicken. Cover and cook, 6 to 8 hours on low or 3 to 4 hours on high. Serve garnished with rosemary sprigs, if desired.
* Here is where I tell you that I didn’t get any pictures of the dark, incredibly tender, totally tasty finished product. 1/2 of it was dished & devoured prior to me getting home and I served and savored without any regard at all to my job of picture taking… Please accept my apologies.*
This was a definite winner (even Justice liked & ate it)!! I spooned the ‘sauce’ over the chicken and potatoes and it was just heavenly. Dominic made himself a lunch serving for tomorrow before I had the chance to clean it up.
