Pretty tasty Pineapple Chicken

I found this one on one of my massive recipe searches. You know the kind; where there are 3 or 4 windows with 7-10 tabs each and you’re (well, ok, I’m) clicking and toggling back and forth waiting for pages to load and gathering as much as you can. The last one I did was a few weeks ago and this was one of the triumphant finds courtesy of Six Sisters Stuff. :)

Pineapple Chicken

Cook Time: 4 hours

Yield: 6-7

Pineapple Chicken

This one is easy and tasty. The flavors blend well without being too sweet or tangy. The chicken was moist and, since I used the precooked diced stuff, it was ready to serve and eat with no fuss.

Ingredients

  • 4 frozen chicken breasts (I used 1 bag frozen diced grilled chicken)
  • 1/2 c. soy sauce
  • 1/2 c. teriyaki sauce
  • 1 can pineapple chunks, drain half the juice out
  • Crushed red pepper flakes - optional (I omitted)

Instructions

  • Spray the crock pot with nonstick cooking spray (I used a little bit of canola oil on a paper towel) and add chicken breasts.
  • Pour soy sauce, teriyaki sauce, and pineapple chunks (with half of the juice) over the chicken.
  • Sprinkle as many red pepper flakes on top as desired.
  • Cook on high for 4-6 hours.
  • Shred chicken with two forks in the crock pot (step omitted as I used diced chicken) and serve over rice.

Weekly Meal Plan 02/19/12

Happy Holiday Monday to you!

I hope that you’re enjoying this fine Monday morning and that it’s just the start to the new week that you need. :)

I apologize for not getting this post to you yesterday. My internet decided it got a day of rest as well and I was not able to get online to get it done. But problem remedied. Here it be for your eyes to feast upon so that your bodies may as well.

Let’s get right to it :)

Sunday – Yesterday was a Scrounge day for us. And actually, since Dominic was helping friends move most of the day and was ever-so-kindly fed, he didn’t end up eating dinner. So pretty much just Justice and I scrounging some leftover pasta and throwing in some bits here and there.

Monday – Today will be the lasagna (1 of my fave Dump & Ditch’s) that was on last week’s schedule that never got made. Last week didn’t go exactly to plan but I did get the 2 new ones made and will be bringing those posts to you ASAP.

Tuesday – It’s another Dump & Ditch scheduled today. Chicken Stroganoff that I’ll be adding some green beans to as a side. Tasty dish indeed.

Wednesday – It’s Quiche tonight. This one is so easy and delicious. I love it!

Thursday – Tonight is the 1st new one of the week. Cheesy Tortellini a la Dump & Ditch :) This makes the 3rd tortellini recipe in our repertoire but the first D&D version. This one is also the only non-vegetarian, although it would be easy enough to make it so.

Friday – It’s Nachos again tonight. Dominic’s sister and nieces will be in town and this is a GREAT group recipe. :)

Saturday – The 2nd new one this week. Enchilada Skillet. This has almost no resemblance to true enchiladas but it’s worth a try. :)

And that’s all she, and of course by “she” I mean me, wrote! ;)

The newest recipes will be brought to you in between packing and feeding children and errands and starting dinner and .. and .. and .. ~deep breath~

Mmmm Mmmm Meatballs!

Of the Sweet & Tangy variety.
I’ve heard and seen this recipe about 2 dozen times over the last year or two but never actually tried it. Until recently that is.
I tell ya…it sure did make me wonder why on earth I had never made them before. And the fam agreed.
Here they are for you. (I actually pulled this recipe from sixsistersstuff.com)

Sweet & Tangy Meatballs

Cook Time: 2 hours

Yield: 6 (with rice)

Every time that I have personally seen or heard of this recipe it's been done as an appetizer/snack. I, as the SixSistersStuff directions suggested, served them over rice along side a head of steamed purple cauliflower. It was quite a different and delicious dinner indeed.

Ingredients

  • 1 12 oz jar chili sauce (in the ketchup section at our grocery store)
  • 1 jar grape jelly
  • 1 pkg. frozen meatballs (I used turkey meatballs)

Instructions

  • Combine jelly and chili sauce in a crock pot and stir until smooth (heat the mixture if needed to combine).
  • Add meatballs or cocktail sausages and set temperature to low.
  • Cook for 2-5 hours on low.
  • Serve over rice or with toothpicks.

Weekly Meal Plan 02/12/12

You know, I just realized on Wednesday of this past week that I never posted the meal plan. Does that say anything as to where my mind has been, or rather hasn’t been, this past week?? I volunteered to help a friend with her website and it took up quite a bit of my time. I was glad to do it though. I got some much needed practice and helped her out immensely (I hope!). She’s been ever so thankful and says she loves it which is wonderful! And now that that’s finally done for her (minus the ongoing little tweaks of course) I can finally get back to focusing on you! and my beloved blog. Well, it’s beloved to me… ;)

So, with that said, I present to you this week’s meal plan. We’ve got 2 new ones on the sched this week, both falling at the end. And surprise surprise, they’re NOT Dump & Ditches! I’m departing from the recent trend and trying something else. No fear though, there will be many many more D&D’s to come! Promise!

Ok-here we go

Sunday – Today wasn’t anything special. A quick and easy meal that, like the 1st time, I added peas to to round out. Mushroom Chicken Cream Pasta. Tasty, light and takes no more time than it does to cook pasta. Score!

Monday – Tomorrow holds a favorite that really only became so after a modification. It’s our meatloaf night (with mashed potatoes and sweet corn this time). The original attempt at this tomato-free version used ground turkey but after trying ground beef and then, on a whim, ground chicken we declared a CLEAR winner. Ground Chicken meatloaf for us!! It sounds weird and it’s natural to be hesitant, but I’ll tell you right now. It’s WELL worth the try!! I highly (we actually) recommend it! If you only try one of the recipes from this week, this one should be it!

Tuesday – It’s Italian Bowtie Supper (a delish Dump & Ditch) in the cards for us today. We’ve only done this one once before but it was quite tasty and definitely worth a repeat. So…here it be.

Wednesday – Tonight we do a household favorite that hasn’t seen any table time in a while… It’s Turkey Mac~n~Cheese tonight. Woo! :)

Thursday – Our 2nd and final D&D for the week is Lasagna. Umm……All I have to say is…Y-U-M! :)

Friday – Our 1st new recipe of the week will grace our table today. Ravioli with Snap Peas. This one is vegetarian originally but definitely easy enough to change. I’m definitely looking forward to this one. :)

Saturday – The last day of our meal plan has Sausage & Summer Squash waiting for us. Another recipe.com find. It looks super delish and it’s a bit different for us which is a good thing. :)
